These cute little pumpkin quesadillas are the perfect way to celebrate Halloween! You can make just one or for a crowd
This isn't the most innovative or exciting recipe, but it is so cute!
I found the idea from MyRecipes and decided it was too adorable not to make.
So if you need something festive that doesn't require too many ingredients or doesn't have pumpkin or is something pretty much everyone likes {who doesn't like a cheese quesadilla?!}, then make these!
You can make a lot at a time if you have a big baking sheet. Or you can make just one.
I started mine on the stove to crisp up the bottom, but you definitely don't have to do that.
One thing not to do: flip the quesadilla over so the open face is down. All you get is a cheesy mess and you can't tell that it's a jack-o-lantern.
Pumpkin Quesadilla
Ingredients
- 2 whole grain tortillas
- 1 ounce cheddar cheese shredded or thinly sliced
- ยผ cup salsa
Instructions
- Preheat broiler.
- Stack the tortillas on top of each other. Using a sharp knife, cut some of the top part of the tortilla off to make a pumpkin stem.
- On one tortilla, cut out eyes, a nose, and a mouth.
- Arrange cheese on top of the tortilla without the face. Top with the other tortilla.
- Optional first step: Put the quesadilla in an oven-safe skillet over medium-high heat with the full tortilla (not the cut ouon the bottom. Cook for 2 minutes. Transfer skillet to oven and broil for 2 minutes.
- Or skip the stove-top step and just put on a baking sheet. Broil for 3-4 minutes. Be careful to make sure it doesn't burn under the broiler.
- Enjoy dipped in salsa.
