    Pesto Pasta

    Have dinner ready in under 10 minutes. This vegetarian dish is full of veggies and full of flavor from the pesto. You can use store-bought pesto or homemade.

    Ingredients

    • 8 oz whole grain pasta
    • ยผ cup pesto
    • 1 pint cherry tomatoes halved
    • 1 yellow bell pepper chopped
    • 2 oz Parmesan cheese freshly grated

    Instructions

    • Boil a pot of water. Once water boils, add pasta and cook 7-9 minutes {or until al dente}.
    • Meanwhile, put ยผ cup pesto in a large bowl.
    • Drain pasta and reserve ยผ cup pasta cooking water. Add the hot cooked pasta to the pesto. Toss the pasta with the pesto. Stir in the tomatoes and bell pepper.
    • Serve each plate with ยฝ oz. freshly grated Parmesan cheese.
