Pesto Pasta
Ingredients
- 8 oz whole grain pasta
- 1/4 cup pesto
- 1 pint cherry tomatoes halved
- 1 yellow bell pepper chopped
- 2 oz Parmesan cheese freshly grated
Instructions
- Boil a pot of water. Once water boils, add pasta and cook 7-9 minutes {or until al dente}.
- Meanwhile, put 1/4 cup pesto in a large bowl.
- Drain pasta and reserve 1/4 cup pasta cooking water. Add the hot cooked pasta to the pesto. Toss the pasta with the pesto. Stir in the tomatoes and bell pepper.
- Serve each plate with 1/2 oz. freshly grated Parmesan cheese.
