Mint pesto brightens the feta & veggies in this flatbread pizza. Perfect for celebrating the refreshing spring season
It's Recipe ReDux day, and this month is "Green with Envy." You're supposed to come up with a non-traditional way to use herbs.
Since I really procrastinated {I went to the grocery store today at 3:30 this afternoon}, there were already lots of recipes posted from other Recipe ReDuxers that I was potentially going to make.
I contemplated skipping this month, but I always use herbs. I love herbs. How could I skip making something fun with herbs?
New idea: Make a pizza. I've been craving pizza for a while and I have some partially baked pizza crusts in my freezer.
So I decided to procrastinate a little longer and Google some recipes for pizza with mint.
Putting mint on pizza is definitely non-traditional.
I was quite skeptical because I really only like mint in drinks or by itself. I don't love mint in things, honestly. But I decided to just try it out when I found the idea to make a pizza with mint pesto.
With my pizza idea in mind, I walked to the grocery store a few blocks away which ended up being a terrible idea because I intended to buy feta and a zucchini only. However, $31.24 later I left with feta & a zucchini plus a half gallon of milk, 1.5 pounds fresh shrimp, a 3 pound chicken, 2 green bell peppers, 3 containers of yogurt, and two 5 pound bags of grapefruit.
I'm sorry but when grapefruit is on sale for $5 for two 5 pound bags, I will not pass that up.
I totally lamented the fact that the 10 pounds of grapefruit along with my two bell peppers, 3 containers of yogurt and 3 pound chicken were all on sale. Add to that the 1.5 pounds of shrimp & a half gallon of milk and then walk home. Not my idea of a good decision
A) My hands were purple by the time I got home because they were squished from holding heavy bags
B) Naturally, I saw a few people I knew that looked at me like I was crazy when they saw all the groceries I had and was walking. Do they not understand how good of a deal the 10 pounds of grapefruit for $5 is?!
C) Maybe I should be a little more diligent about strength training a few times a week...?
Oh and I forgot to wear my FitBit, so I didn't even get to count those steps. I was so bummed
K, back to the recipe...
I made a quick creamy pesto from mint & parsley with yogurt, then I spread that on a partially baked pizza crust and topped it with some veggies and mozzarella & feta. Ten minutes later I was devouring this strangely delicious pizza.
If you happen to have an overgrowth of mint in your herb garden, I highly suggest this recipe!
I used thinly sliced zucchini and some roasted red peppers, but eggplant, caramelized onions, kale, and garlic would all be tasty additions to this pizza. You could also replace the feta with ricotta if you prefer.

Pizza with Feta & Mint Pesto
Ingredients
For the Pizza:
- 6 oz. whole wheat pizza dough
- 1 tablespoon cornmeal optional
- ยผ small zucchini very thinly sliced
- ยฝ roasted red bell pepper sliced
- ยผ cup crumbled feta cheese
- โ cup shredded part skim mozzarella
For the Pesto:
- ยฝ cup fresh mint lightly packed
- โ cup fresh parsley lightly packed
- 2 tablespoon walnuts
- 3 tablespoon plain Greek yogurt
- 1 clove garlic roughly chopped
- 2 teaspoon lemon juice
- 2 teaspoon olive oil
Instructions
- Put a baking sheet or pizza stone in the oven and preheat the oven to 450°F.
- Thinly roll out the pizza dough onto a non-stick surface {parchment, waxed paper, silicone liner, pizza peel}. When the oven is preheated, sprinkle the {very hot} preheated baking sheet lightly with cornmeal, and transfer the thinly rolled pizza dough to the baking sheet. Bake for 6 minutes until the crust is set
- Meanwhile, make the pesto. Put the mint, parsley, walnuts, Greek yogurt, garlic, and lemon juice in a food processor and blend. Add the oil and pulse a few times to completely combine.
- After you take the pizza crust out of the oven, spread the creamy pesto evenly over the crust. Top with zucchini and bell pepper slices. Sprinkle evenly with cheese. Bake for another 5-8 minutes, until cheese is bubbly

I've never seen a creamy pesto recipe - but sounds delish! Thanks for the brand new ideas for mint....as it always takes over my garden. O and grapefruit is my FAVORITE fruit...so I totally get it!
