This Skillet Cornbread Mix is almost as easy as using a boxed mix, and it's more wholesome. There's no trans fat and it's 100% whole grain. Great to give the mix with a cast iron skillet for a unique and useful gift.

This one was hard for me because I thought of too many ideas
I love my immersion blender. Like can't live without it love. But I have already done tons of blended soups, so that'd be a little boring.
Moving on... my mini food processor.
That thing never gets put away. It just lives on my counter top. I make hummus, pancakes, blend cottage cheese for a mayonnaise substitute {jalapeño popper dip & spinach artichoke dip}, the list goes on
Scratch that one because, like the immersion blender, I've already used it a lot in my recipes.
Then I forgot about it, and one day I was reading the December 2011 issue of Southern Living and saw the cutest idea for a gift!
So this gift idea is completely Southern Living's, but I think that's ok. I mean, they are sharing gift ideas right?
Of course I had to change it up a bit.
After reading the ingredients on the box of corn muffin mix, there was just no way I would buy that, let alone give it to someone.
Surely, there's a way to come up with my own non-trans fat containing cornbread mix. {and there is...see below}
So I went to Walmart and bought a cast iron skillet then made my own cornbread mix... Ta-da! Here is my adaptation of a great idea from Southern Living.

Skillet Cornbread
Ingredients
for the cornbread mix:
- 1 cup whole grain flour white whole wheat, whole wheat pastry, or whole grain gluten free all purpose blend
- 1 cup stone-ground cornmeal
- 2 tablespoon sugar
- 1 tablespoon baking powder
- ยฝ teaspoon salt
for the cornbread:
- 1 large egg
- 1 cup milk or buttermilk
- 4 tablespoons butter melted
Instructions
To make the cornbread mix:
- Whisk together all the ingredients. Transfer to a plastic bag and seal tightly.
- Wrap if desired. Be sure you attach the recipe, so your recipient knows what to do... or just in case you forget ๐
To make the cornbread:
- Put a 9 inch skillet in the oven and preheat oven to 425°F.
- Put the cornbread mix into a bowl and add the egg, milk, and butter.
- Whisk together until completely combined but don't over mix.
- Carefully take the skillet out of the oven and pour the batter into the skillet.
- Transfer skillet back to the oven and bake for 18-22 minutes until done. Cut into 8-12 slices and serve.
