    Use leftovers to stuff bell peppers for a delicious & quick dinner

    Leftovers are one of the best parts about writing a food blog. I've talked about my love of leftovers multiple times before, but what I like even better than leftovers is when you can make your leftovers into something even more delicious.

    I love every Recipe ReDux theme but this month... this month is good. Two for One is the theme ~ cooking once and eating twice.

    Some of my favorite things to make from leftovers include fried rice, frittata, and pizzas.

    But pulling from something we did growing up, my favorite way to reuse leftovers is to stuff bell peppers with leftovers.

    Stuffed Bell Peppers from Living Well Kitchen

    We usually did this with leftover spaghetti sauce, but since I had some leftover taco meat in my fridge, I thought this would be a great use of the spicy seasoned meat.

    Most of the time, I don't have too much leftover taco meat because, well, tacos are delish and I don't have too many leftovers. But an easy way to stretch your leftovers is to add a can of black beans.

    Stuffed Bell Peppers from Living Well Kitchen

    Just slice some bell peppers in half and fill them with your taco meat + black beans.

    Then top with cheese and bake for 10 minutes. So quick. So easy. So yummy!

    Ingredients

    • 2 cups leftover taco meat
    • 15 ounce can black beans rinsed and drained
    • 4 medium bell peppers
    • 2 oz cheese grated {about ยฝ cups}

    Instructions

    • Preheat oven to 400*F.
    • Stir together leftover taco meat and black beans. Slice bell peppers in half, and remove seeds and ribs. 
    • Place bell pepper halves on a baking sheet and fill with meat-bean filling {about ยฝ cup per bell pepper half}. Sprinkle each half with a few tablespoons of cheese.
    • Put in preheated oven and bake for 10 minutes until cheese is bubbly. Enjoy!

    Notes

    *You can use leftover taco meat, leftover hamburger meat, or any leftover cooked ground beef.

        Totally agree!! I always buy bell peppers "just to stuff them" and then end up forgetting and using them for other recipes ha!
