    Roasted Shrimp, Okra and Tomatoes

    Roasted Shrimp, Okra and Tomatoes only needs seven summer ingredients to make an easy & tasty one pan meal in the oven. Bake the shrimp and vegetables on a baking sheet and enjoy in less than 40 minutes

    Does okra scare you?

    I hope not because it's one of my top five favorite vegetables (the other ones include artichokes, onions, mushrooms, and a tie between cauliflower and brussels sprouts).

    Yes, if it's cooked wrong, it can be slimy and weird. (Even though I don't mind that because I love okra that much).

    One of my favorite ways to eat okra is pan fried, but that can be a little time consuming.

    Then my friend Marisa blew my mind when she told me she roasts her okra. What?! You can roast okra?! That's basically the best news ever because if you've been reading this blog for like a day, you'll know how obsessed I am with roasted veggies.

    Anywho, I was feeling incredibly lazy but needed to cook my okra.

    Luckily, I found Marisa's recipe for Roasted Okra and Tomato Salad. I decided I would make that but toss some shrimp and garlic on the baking sheet to make it a meal. Naturally, I added a little cheese at the end because cheese.always.

    You'll need 7 ingredients: shrimp, okra, tomatoes, garlic, olive oil, and salt. That's it.

    This recipe is a dream for summer because you throw all that delicious summer goodness on a pan and call it a day.

    This one pan meal works in the best way possible: the tomatoes burst in the oven and mix with the garlic flavor to add their goodness to the okra and shrimp.

    The okra goes from raw to golden brown, and the shrimp cook without drying out or being tasteless. Add in the feta and everything balances out so nicely.

    You can eat this as is, or serve over a bed of cooked grains.

    Now go throw everything onto your baking sheet, pour a glass of chilled wine, and relax because dinner will be done in 20.

    Roasted Shrimp, Okra, and Tomatoes

    Ingredients

    • 2 tablespoon olive oil
    • 1 pint cherry tomatoes
    • 1 pound okra
    • 10 oz peeled shrimp
    • 3 cloves garlic sliced
    • ยผ teaspoon kosher salt
    • 2 oz feta crumbled

    Instructions

    • Preheat the oven to 400*F. Line a baking sheet with foil (for easier clean up).
    • Add oil, tomatoes, okra, shrimp, garlic, and salt to the baking sheet. Roast for 10 minutes. Stir and roast another 10-15 minutes, until shrimp are done.
    • Remove from oven and sprinkle with feta. Enjoy!

    Notes

    *If buying unpeeled shrimp, use 1.25 pounds unpeeled shrimp.
    *You'll get about 30 medium sized shrimp in 10 ounces
