Salmon Asparagus Bundles are a tasty, simple, elegant, and healthy appetizer or light lunch perfect for springtime
Today I have an easy springtime appetizer/light meal for you.
These happened because I was going out of town and needed to cook my asparagus before they went bad and use some roasted bell peppers and salmon I had leftover from The Lent Special grilled cheese.
They are fabulously easy and quite pretty
You could serve them as an appetizer for a nice brunch, lunch, or dinner. They would be a wonderful addition to an Easter menu as well.
They are great because pretty much anyone can eat them ~ gluten-free, egg-free, soy-free, nut-free, shellfish-free, corn-free, and dairy-free. Just be sure to check labels to make sure they are free of certain ingredients you need to avoid.
The best part about them is how easy they are and how simple they are to throw together.
You just roast the asparagus and bell pepper {or use a roasted bell pepper}. Slice the bell pepper. Then wrap the smoked salmon around the roasted asparagus and bell pepper.
You can either serve them as is or stick them back in the oven for a quick broil.
I preferred the broiled version, but they were equally delicious both ways.
The recipe serves about 4 people but can easily be doubled or tripled or even quadrupled as needed. I kept leftovers in the fridge and ate them for a light lunch and even for breakfast (I'll eat anything at breakfast ha).
There's really not much else to say about these things other than that they are incredibly simple, quite tasty, and rather healthy ~ just salmon {full of healthy omega-3 fats and protein} and veggies. My kinda app/light meal.

Salmon Asparagus Bundles
Ingredients
- 1 lb asparagus spears
- 1 tablespoon olive oil
- ยผ teaspoon salt
- โ teaspoon garlic powder
- โ teaspoon paprika
- pinch cayenne pepper
- 1 medium red bell pepper or roasted bell pepper
- 4 oz smoked salmon
Instructions
- Preheat oven to 425°F. Line a baking sheet with foil and set aside. (If you are planning on broiling the bundles, then put about 8-10 toothpicks in a bowl of water to soak)
- Snap the ends off of the asparagus spears. Toss with oil, salt, garlic powder, paprika, and cayenne pepper. Put on baking sheet. Cut bell pepper in half and take out ribs & seeds. Put on baking sheet with asparagus.
- Transfer to preheated oven and roast for 10 minutes. Stir, then roast another 8-10 minutes. Remove from oven and let cool slightly.
- Slice bell pepper. Group the asparagus into about 3-4 spears and add a few bell pepper slices with the asparagus spears. Turn oven to broil.
- Wrap the bundles with a piece of smoked salmon. Secure with a toothpick* if desired. Put on baking sheet and repeat with remaining salmon & asparagus/bell pepper. Put in oven to broil for 2-3 minutes, or just serve as is. Enjoy!
