Adding dried plums to this sausage and goat cheese pizza takes it from good to incredibly delicious

This might be the most random/interesting/weird thing I've ever made. And it's gooooooooooood. Like I could eat the whole pizza if I was super duper hungry.
Let's start from the beginning and we're gonna go way back, way way back, like 20 years back.
When I was a little kid, my grandfather used to always give us dried plums. I'm not exactly sure why but it is one of those childhood memories that I will always remember and I'll hold a special place in my heart for dried plums because of Grandaddy.
So when there was the opportunity to come up with a recipe using dried plums for The Recipe ReDux, I knew I'd be participating.
I got the samples in the mail and ended up just snacking on the samples before I could even think of a recipe. Gah, I forgot how much I love dried plums!
They taste good plus they are full of benefits; for one serving {about 4-5 dried plums} you get 3g fiber, 293mg potassium, 16mg magnesium, and more vitamin K than any other fresh or dried fruit.
Not to mention that emerging research has shown that dried plums supports healthy bones and may support heart health, digestive health, immunity, and healthy aging. All of that in one tasty little, portable package! I'll take 4-5 please ๐

So other than finding my love for dried plums, this recipe has no connection to my childhood. In all honestly, this recipe is so random and happened because I was wondering through Whole Foods with a hungry tummy {DANGER}.
I wanted it to be savory for some reason. Maybe it was because I needed dinner; I don't know.
So I walked up and down the aisles looking for inspiration {and sales}. Initially I thought I'd do a breakfast casserole for Mother's Day, but then I saw some frozen pizza crusts. Yes! Pizza!
Now what would I put on my pizza with my dried plums that would actually be good? Something that would balance the sweetness of the plums. I knew goat cheese would be able to hold its own, then I found some sausage that was on sale.
Ok so I wish that I could tell you that this pizza is good because I am creative and inspiring. But alas, it's because I was hungry and everything sounded good so I tried to buy things on sale.
Nonetheless, it's delish!
You might not think that dried plums would be good in a savory dish, but I promise you that they work in this pizza and they are a mandatory ingredient.
The sweetness of the dried plums with the rich goat cheese and salty sausage balances so well on top of a whole wheat pizza crust. I can't explain it, other than that you really must give it a try.
I tried it without the dried plums and it was less than boring. Don't skip the dried plums!
Plus, adding the dried plums to this pizza helps make this pizza a bone health boosting wizard. You've got the calcium, vitamin K, and phosphorous from your cheese with the bone health boosting benefits of the plums. So you can just think about how your fighting osteoporosis with this yummy pizza!

I used two thin crusts that totaled 12 ounces, but if you have unbaked pizza dough then bake it into two pizzas. (Just aim to get between 12 and 16 ounces of pizza dough/crust)
Also, I used uncooked Italian chicken sausage; you want to make sure your sausage is uncooked so you can crumble it for the pizza.
The recipe makes 12 slices of pizza, and you can totally freeze any leftovers. But I'm not sure you'll have leftovers... unless you are making this just for yourself ๐

Sausage, Goat Cheese, and Dried Plum Pizza
Ingredients
- 12 ounces sausage
- 1 medium yellow bell pepper diced
- 1 medium red bell pepper diced
- 12 ounces thin pizza crusts (2 large pizza crusts)
- 2 ounces mozzarella cheese shredded
- 4 ounces goat cheese crumbled
- 1 cup dried plums chopped
- ยผ cup fresh parsley chopped
Instructions
- Preheat oven to 450*F.
- Heat a large skillet over medium. Add sausage to skillet. While cooking, break up with a spoon into sausage crumbles. Add diced yellow and red bell peppers, and sauté for 7 minutes until peppers are soft. Drain and set aside.
- Sprinkle one ounce of mozzarella cheese over each pizza crust. Sprinkle ยฝ cup dried plums on each pizza. Top each pizza evenly with sausage-bell pepper mixture. Crumble 2 ounces of goat cheese on each pizza.
- Put pizzas directly into preheated oven. Bake for 8-10 minutes until crust is crispy.
- Sprinkle each pizza evenly with parsley and enjoy!

I love how you came up with this recipe, lol! There's a pizza place near me that makes a fig, goat cheese pizza and it's amazing, so I have no doubt that your dried plum/goat cheese concoction will be just as good!!
