Great weeknight meal ready in under 30 minutes, made all in one skillet
So I'm not sure why I've been craving BBQ so much lately. Maybe because the temperature outside was 81° yesterday, and the sky could not have been a prettier blue. It was February but felt like May, which just so happens to be National BBQ Month.
The other (most likely) answer is that I wanted to make some BBQ sauce, and then I had 3 cups of sauce that I needed to find recipes to use it in.
My suggestion to you is that you make the BBQ sauce today {if you didn't yesterday}. Then tonight make this Skillet BBQ Chicken Pasta.
And tomorrow you can throw all of the ingredients in the crock-pot for the Crock-Pot Pulled Pork. Lucky for you, I'll post a recipe tomorrow morning for cornbread that goes perfectly with the pulled pork. It's quick and easy. {P.S. If you can't eat meat on Friday, save the pulled pork for Saturday and make one of these delicious meals instead}
Oh and this weekend, make a BBQ Chicken Pizza. No recipe needed - just mix ½ cup pizza sauce & ¼ cup BBQ sauce together. Spread the sauce on a pre-baked whole wheat pizza crust. Toss some shredded cooked chicken with BBQ sauce. Top the pizza/BBQ sauce with the chicken, some red onion slices, and mozzarella. Then drizzle more BBQ sauce on top. Bake 10-15 in a 425° oven, and top with chopped cilantro.
And you have a delicious BBQ Chicken Pizza that tastes like the one at California Pizza Kitchen, yay!

OK, on to the recipe:
Skillet BBQ Chicken Pasta
Ingredients
- 2 teaspoon oil olive or avocado oil
- 8 ounces chicken breast cut into 1 inch pieces
- 1 large red onion diced
- 1 clove garlic minced
- 1 cup chicken broth or vegetable broth or water
- 1 1/2 cups water
- 1 1/8 cups whole wheat penne pasta 5 ounces
- 1/4 cup BBQ sauce
- 1/4 teaspoon salt
- 1/4 cup plain yogurt
- 1/4 cup shredded mozzarella cheese
- 1/4 cup shredded cheddar cheese
- 1 green onion chopped
Instructions
- Heat oil in a large skillet (preferably a deep skillet) over medium heat. Add the chicken pieces, onion, & garlic, and cook for 7-10 minutes until chicken is done and onion has softened. Remove chicken, onions, & garlic from skillet and set aside.
- Add chicken broth, water, and pasta to skillet. Bring to a boil; reduced heat & simmer for 15 minutes, until almost all the liquid is absorbed and the pasta is tender.
- Stir in the BBQ sauce, salt, and yogurt. Then stir in the chicken & onions. Cook for 5 more minutes. Remove from heat and stir in cheeses. Top with green onions & serve. Dig in!

I promise I will try not to post anymore BBQ recipes for a while. It is still technically winter after all. Next week I'll have some more season appropriate recipes...
