Happy holiday season! It's the most wonderful time of the year, isn't it?!
While I love Christmas trees, hot chocolate, ice skating (wow, I'm bad at ice skating), and lights upon lights everywhere, the holiday season is full! And by full I mean I can't get it together enough to always have healthy meals in my fridge, i.e. I order takeout more than I'd like.
Takeout starts adding up if it becomes often instead of occasionally... and that's not budget friendly which matters even more when I'm supposed to be buying people presents.

The slow cooker and lots of veggies save the day here. While steak isn't really a budget item, you can stretch it by adding lots of veggies to the dish. I used mushrooms, onions, carrots, and some potatoes.

The honey and the balsamic vinegar add a sweet element to the dish (without making it weird or really sweet) and rosemary adds a savory taste to this steak dish. However, if you omit the rosemary, it is still really tasty!
This takes about 10 minutes to prepare and makes 6 cups of food. I was full with only one cup so it can serve 4 really hungry people or 6 people for lunch.
Feel free to play around with the veggies you use. I think mushrooms and onions are mandatory because they go so well with the steak, but you could also try adding bell peppers or even tomatoes.
You can also add more of a veggie you really like or bulk up the dish by adding extra potatoes.
This slow cooker steak dish is filling, warming, and delicious -- a great meal for a cold winter night. It also makes yummy leftovers and even freezes well.

Slow Cooker Honey Balsamic Steak and Veggies
Ingredients
- 2 medium onions chopped
- 2 medium carrots chopped
- 1 pound top sirloin steak chopped
- 8 ounces mushrooms chopped
- ยฝ pound red potatoes chopped
- 2 tablespoon balsamic vinegar
- 1 tablespoon honey
- ยฝ cup no salt added beef broth
- 1 teaspoon Worcestershire sauce
- ยฝ teaspoon salt
- 2 sprigs fresh rosemary optional
Instructions
- Add onions, carrots, steak, mushrooms, and red potatoes into the slow cooker.
- Whisk together balsamic vinegar, honey, beef broth, Worcestershire sauce, and salt. Pour over steak and veggies. Add in rosemary sprigs, if using. Cover and cook on Low for 6-8 hours, stirring halfway through cook time (if possible).
- Enjoy! (Leftovers are delicious, too!)
