    Slow Cooker Maple Mustard Pork Chops and Onions

    An easy slow cooker meal that's full of caramelized onions plus tangy, savory, and sweet pork chops

    Slow Cooker Maple Mustard Pork and Onions from Living Well Kitchen

    I am LOVING the response I've been getting for the Veggies All Year series. More importantly, I am loving all the onion love.

    Since my most popular recipes involve the slow cooker, I thought I'd create a good slow cooker recipe that is full of onions.

    But for a second, can we talk about how many onions I've chopped this week? Sixteen. I've peeled, chopped, diced, and/or sliced sixteen onions. That's a lotta onion tears. Happy onion tears.

    Slow Cooker Maple Mustard Pork and Onions from Living Well Kitchen

    This recipe has two pounds of onions which is about 4-5 onions. I thinly sliced them and put them in the bottom of the slow cooker.

    Then I did a little experiment with the pork... A lot of recipes involve searing the meat before putting it in the slow cooker. However, I want my slow cooker recipe to involve as little work as possible.

    Please don't think I'm lazy; my brain just doesn't work as well in the morning when I'm throwing everything into my crock-pot. Do I really have to sear the meat? Does it make that much of a difference?

    I decided to sear two of the pork chops and leave the other two raw. The verdict: it made no difference. No difference at all. {Just a note: in the pictures, the front pork chop is the one I seared. The one in the back is the one I didn't sear}.

    So let's leave out that extra step of searing the meat - yay for time saving!

    Slow Cooker Maple Mustard Pork and Onions from Living Well Kitchen

    So just sit the raw pork chops {I used center cut pork chops, which are boneless} on top of the onions. Whisk together maple syrup, mustard, and apple cider vinegar and pour the mixture over the pork. Cover and cook for 6-7 hours on High or 9-10 hours on Low.

    There will be a fair amount of liquid in the crock pot, so I just used a slotted spoon to scoop out my pork and onions. This was delicious served with a baked microwaved sweet potato.

    Think caramelized onions with savory/tangy/sweet pork. It's good, and it's incredibly easy.

    The "hard" part is slicing the onions. With that, I give you an onions lovers dream recipe - easy, tasty, oniony goodness with cherries pork on top.

    Slow Cooker Maple Mustard Pork Chops and Onions

    Ingredients

    • 1.5 lbs onions sliced
    • 3 cloves garlic minced
    • 4 (5 ounce) center cut pork chops about 1.25 pounds
    • ยผ cup mustard
    • 3 tablespoon maple syrup
    • 1 tablespoon apple cider vinegar
    • 4 small sweet potatoes baked

    Instructions

    • Put the sliced onions in the slow cooker. Sprinkle with minced garlic and top with raw pork chops.
    • Whisk together mustard, maple syrup, and vinegar. Pour mixture over pork chops.
    • Cover and cook on High for 6-7 hours or Low for 9-10 hours.
    • Serve with a slotted spoon along with baked sweet potatoes. Enjoy!

    Notes

    *This is great served with baked sweet potatoes for extra color, nutrition, and some high-quality carbohydrates.

      I did lay the potatoes first and used green giant potatoes. And I used dijon mustard. It was a great dish will make it again. 6 hours on high.
