Gah, I love my slow cooker, and I use it year round. In fact, I feel like the slow cooker is even better in the summer because it means I don't have to stand over the stove or turn on the oven which inevitably heats up your house.
Slow cooker recipes are the most popular recipes on Living Well Kitchen, and they were the most requested recipes on my most recent reader's survey.
So I'm here with another tasty, easy peasy slow cooker recipe since you asked for it! And I have a video to go along with it!! (You can watch the video above or on YouTube)
This one is modeled after my Salsa Chicken recipe, but this version uses salsa verde and pork.
Salsa verde is a nice change from regular tomato salsa because it uses tomatillos and has a slightly different taste. It is also great with the pork.
I used boneless pork chops because they were on sale, but you could also use a pork tenderloin or other choice of pork that you prefer.
I like to use one that isn't too fatty because I don't like my shredded pork to be greasy but that's just a personal preference.
This takes less than 3 minutes to prepare. Fill the slow cooker with diced onions then top with the pork then cover in salsa, and cook.
I love that the salsa and onions provide tons of veggies, so you can rest assured that you're getting lots of nutrients in here. I like serving this in taco form with some cilantro and avocados.
It'd also be great with a side of cornbread or served on a bun. Oooh or some tortilla chips. Any way you want to eat it works!
Slow Cooker Salsa Verde Pork
Instructions
- Spread the onions on the bottom of a slow cooker.
- Top the onions with the pork in an even layer.
- Cover with salsa verde.
- Cover and cook for 8 hours on Low or 4 hours on High
- Shred the pork (either in the slow cooker or on a cutting board) and stir back into the sauce in the slow cooker.
- Serve in tacos, with cornbread, with tortilla chips, in a bun, whatever works!
