    Light and flavorful dinner perfect for the spring and summer! Great served over cooked rice or quinoa

    Lemon Chicken with Asparagus and Mushrooms from Living Well Kitchen

    This is the perfect easy springtime dinner with asparagus, mushrooms, and onions.

    It's bright and flavorful.

    I love it because it fills me up {with all the veggies} but doesn't make me feel extremely full.

    Since I am cooking most of the day {and eating most of the day}, I typically don't have a huge meal in the evening and this meal is perfect.

    Serve it over whole wheat pasta or brown rice or quinoa for a heartier meal, but tonight I just wanted something simple and light since I made cookies and granola and something with potatoes earlier in the day.

    The important thing about this recipe is to use high quality ingredients.

    Make sure the veggies you are using are in season or they won't give any flavor and then your meal will be nothing less than blah.

    I love the combination of lemon and thyme but parsley, basil, or rosemary work well here, too.

    Ingredients

    • 1 tablespoon olive oil
    • 1.25 lb chicken breast cut into 1" pieces
    • ยฝ teaspoon salt
    • 1 yellow onion chopped
    • 1 red onion chopped
    • 16 oz mushrooms sliced
    • 1 lb asparagus cut into 1" pieces
    • 2 cloves garlic minced
    • ยผ teaspoon red pepper flakes
    • ยฝ teaspoon fresh thyme
    • 1 lemon juiced

    Instructions

    • Heat oil over medium-high heat in a large skillet. Add chicken, sprinkle with salt, and cook for 5 minutes.
    • Flip chicken and add onions. Saute for 5 minutes then add mushrooms and asparagus. Saute until mushrooms release their juices, about 7 minutes.
    • Add garlic, red pepper flakes, and thyme, and cook, stirring constantly, for 1 minute.
    • Squeeze lemon in pan and scrape up any bits that are stuck to the skillet.
    • Remove from heat and enjoy! Serve with brown rice, quinoa, or whole wheat pasta if desired {not included in Nutrition Facts}
