Remember how I talked about some gluten-free crackers I received recently to create recipes for?
And how I ate them all before I even got a chance to create a recipe because they're so delish...
Well, luckily, I found them at Costco so I could create some recipes. Score!
After making a dessert recipe using the Breton Gluten-free Original with Flax crackers, I decided I'd use the Breton Gluten-free Herb and Garlic Crackers.
I generally buy all my vegetables when they are on sale because it means that they are in season. Oh and they save me money, but I buy them seasonally because that's when veggies taste their best.
Since summer is just around the corner, zucchini, yellow squash, and tomatoes are filling the produce section of the grocery store.
I decided that I wanted to make a veggie casserole with all those seasonal veggies.
I feel like all casseroles must include a topping. Topping is the best part of a casserole to me. And I bet if I couldn't have gluten, I'd feel really really sad about missing out on topping.
Thankfully, these buttery, delicious Breton Gluten-free crackers are an incredible solution for topping your casserole if you are avoiding gluten in your diet. Or even if you're not.
The Breton Gluten-free Herb and Garlic Crackers are perfect. They have lots of delicious flavor so you really don't have to add much to your casserole.
Just veggies, cheese, herbs, and cracker topping.
Summer veggie perfection.

Summer Veggie Casserole
Ingredients
- 2 medium zucchini sliced
- 2 medium yellow squash sliced
- 1 medium tomato sliced
- ยฝ teaspoon salt divided
- 1 tablespoon butter divided
- 1 cup ricotta cheese
- 2 tablespoon chopped fresh basil
- 1 clove garlic minced
- 1 egg
- ยฝ cup parmesan cheese divided
- 10 Breton Gluten Free Herb and Garlic Crackers crushed {from a 4.76 oz box}
Instructions
- Slice the veggies and let them sit on paper towels to absorb a little extra moisture. Sprinkle with about ยผ teaspoon salt.
- Preheat oven to 375*F. Grease an 8-inch baking dish with 1 teaspoon of butter. Set aside.
- Meanwhile, stir together the ricotta, ยผ teaspoon salt, basil, garlic, egg, and ยผ cup parmesan cheese.
- Layer a third of the sliced veggies into the greased baking dish. Top with half of the cheese mixture. Put another layer of veggies over the cheese mixture. Top with the remaining cheese mixture. Add the remaining veggies over the top. Cover baking dish with foil, and bake in preheated oven for 20 minutes.
- Remove foil and sprinkle with remaining ยผ cup cheese. Sprinkle with the cracker crumbs. Melt the remaining two teaspoons of butter and pour it over the cracker crumbs. Return casserole to the oven and bake another 15-20 minutes until veggies are cooked and topping is browned.

I've made this casserole 20 times. It's always requested at parties that I bring this!! I've put many twists on it (different veggies added in, spices, etc etc), and it never fails. Thank you for sharing this recipe with everyone!!!!!
