Easy meal to pack in the veggies that is full of Fall flavor, savory sausage and slightly sweet thanks to the sweetpotato and apple. Super nutritious!

I love the South. Hot weather is totally my thing.
But despite a few days of cooler, fall weather, the heat is back on.
I'm kinda ready to start cooking soups and casseroles and other comfort foods, but the weather insists on taking a little bit longer to be in fall season temperatures than I'd sometimes like.
I like to think that the weather helps my patience because I can be terribly impatient sometimes. So while I'd like to make soups and casseroles and the like, I'm still making lettuce wraps and salads.
I'm totally ok with that though because I've found a way to mix the slightly warmer than desired temperatures outside with fall seasonal ingredients like sweetpotatoes and apples.
Sweetpotato, Sausage, and Apple Lettuce Wraps to be exact, and they are flippin' fantastic.
I used Diane sweetpotatoes which are a red/garnet colored potatoes. Just by looking at them, you can tell that they are packed with nutrients. That vibrant color just makes me happy.
Hey, did you know that people who eat more vegetables and fruits were considered more attractive? They are. It's science.
Which makes all the more reason that you should want to try these delicious fall lettuce wraps!
Anyways, I received over 10 pounds of California sweetpotatoes from the California Sweetpotato Council {!!!} and have spent the entire week celebrating the humble yet super nutritious & tasty sweetpotato. It's spelled as one word and it's extremely versatile.

I used a regular pork sausage and made sure to buy one that did not have any nitrates, nitrites, preservatives, etc. Using only 8 ounces to serve 4 helps cut back on the fat and calories that sausage using packs in but there is still tons of flavor {thanks to sautéing the veggies with the sausage}.
Feel free to use turkey sausage or chicken sausage if desired.

Not a fan of sausage? You can use cut up chicken or sliced mushrooms to make it vegetarian.
These are full of fall flavor but slightly sweet thanks to the sweetpotato and apple. I am obsessed with these! I love how easy it is to pack in veggies with lettuce wraps and since I'm always trying to get people to eat more veggies, and this is a great way to do it.

Sweet Potato, Sausage, and Apple Lettuce Wraps
Ingredients
- 8 oz sausage casings removed
- 2 medium onions sliced
- 1 medium green bell pepper sliced
- 2 medium sweet potatoes cubed
- 1 apple cubed
- 2 cloves garlic minced
- ยฝ teaspoon salt
- 1 teaspoon Italian seasoning no-salt added
- 1 cup water or chicken broth
- 1 tablespoon lemon juice or apple cider vinegar
- lettuce leaves for serving
Instructions
- Heat a Dutch oven or large skillet over medium high heat. Add the sausage to the hot Dutch oven and crumble sausage with a spatula or wooden spoon.
- Add in onions, bell peppers, and sweetpotatoes. Sauté for 10 minutes until veggies are softened and sausage is cooked.
- Add the apple, garlic, salt, and Italian seasoning. Stir well and add in water & lemon juice or vinegar. Bring to a boil, reduce heat to medium-low, and simmer for 10-15 minutes until sweetpotatoes are softened and almost all of the water has absorbed.
- Remove from heat and serve mixture in lettuce leaves. Enjoy!
