    So Taco Salad might not be the most interesting recipe name or captivating idea, but I sure do love a good taco salad. I might actually like taco salad more than I like regular tacos, but I can't say that with 100% certainty.

    Either way, taco salad is something I look forward to every time I make tacos. Every time.

    I think I like it so much because I know it's going to taste good no matter what I have to throw in the bowl. Cheese (I always have cheese), avocado, tomatoes, salsa, tortilla chips, beans, quinoa, rice, anything!

    I hate to insult your intelligence by posting this recipe because I know you could come up with this on your own, but I'd hate it even more to not share it with you. I like sharing my favorite meals with y'all!

    Taco Salad from Living Well Kitchen

    For the sake of a recipe, I decided to write down exactly what I used the last time I made taco salad.

    Correction: I'll talk about the recipe that is used in the photos since I had like 17 taco salads after my three batches of taco meat to perfect my ground beef taco recipe.

    I am not a huge salad dressing person.

    I actually like the way lettuce tastes and think that the taco meat + the beans + the cheese + the salsa all add enough flavor.

    However, if you feel like you want a salad dressing for this salad, one of my favorites is to mix 1 part ranch dressing with 2 parts salsa like I did in this Mexican Chicken Salad. Clearly, I like Mexican salads.

    This is also a great recipe to pack for lunch. You can make layers and then just toss it all together when you're ready to serve.

    I hold a special place in my heart for this taco salad, and like I said before, I hope I don't insult your intelligence by posting a recipe as simple as this one.

    I would just absolutely hate it if you never got to enjoy the beauty of taco salad from your leftovers.

    I mean, how many tacos can you eat in one week without getting tired of them?

    That's a trick question because can you ever get tired of anything taco-related?!

    Ingredients

    • 2 cups leftover taco meat
    • 15 ounce can black beans rinsed & drained
    • 2 heads romaine lettuce about 12 cups total, chopped
    • 1 cup grape tomatoes sliced
    • 1/2 cup salsa
    • 1/2 cup shredded cheese about 2 ounces

    Instructions

    • Toss the leftover taco meat with the beans. Set aside.
    • Toss together chopped lettuce, grape tomatoes, and ground beef/bean mixture. Top with salsa and cheese (and any other desired toppings). Enjoy!

    Notes

    *There are so many ingredients you can add. Avocados, cheese, beans, tortilla chips, corn, etc.
    *Salsa Ranch Dressing is my favorite for Taco Salad. Mix 2 parts salsa with 1 part ranch dressing.

      Taco salad is my husbands JAM, hands down his favorite meal! I'm actually making taco lettuce cups tomorrow for dinner! Love this easy version and a good reminder that I need to make actual taco salads more often. Have a good weekend! xo
