Easy, two ingredient recipe that is gluten free, dairy free, and can be eaten as a snack, appetizer or light meal.

Turkey and Asparagus Roll Ups from Living Well Kitchen

Laziness can get the best of me sometimes.

Like, no thanks, I don't want to spend over 15 minutes in the kitchen today to make a meal. I have a life. Or maybe I would rather spend those extra minutes being on the beach, going on a hike, or watching something on Netflix.

I might really love cooking, but I'm human and I don't always feel like spending a lot of time or brainpower in the kitchen.

If you are judging me, feel free to move on because I don't think you'll enjoy my blog if you like complicated meals that take a lot of time.

If, however, you are like me, HI!! How about we make something that takes only a few minutes to make but is really tasty and gives you lots of energy (yay for veggies & protein!)

I realize this isn't much of a recipe but more of an idea. I'm under the belief that you can wrap asparagus in/with anything. Bacon. Salmon. And now I've done turkey (which I hadn't thought to do before and hadn't really ever seen, so I thought I'd share it with y'all).

Let me take a moment to mention that I'm not a huge fan of turkey. It's fine, but it's certainly not my favorite protein. And I've always thought deli sliced turkey was boring.

But I recently grabbed some Cajun sliced turkey and found a newfound respect/like for turkey. (And you should use turkey that you really love in this recipe since it's one of only two ingredients).

One more thing I'd like to mention regarding this recipe: you're going to need some kind of sauce unless you are not really a condiment person (like me, which is why the video and photos don't have sauce. I don't really care about sauce).

That being said, I recommend honey mustard or some kind of mustard sauce (maybe like the one from these Corned Beef and Cabbage Lettuce Wraps) because mustard goes really well with turkey.

Or just do like I did and either eat them alone or with dipped in straight-up spicy mustard.

As for this recipe's purpose, you can eat it as a snack or make for appetizer or even eat as a meal.

But if you eat it as a meal, make sure that you include a carbohydrate like a baked sweet potato (with butter & salt, of course) for energizing and filling carbohydrates your body needs.

I am all for the easiest recipes I can find. When raising my family(stay at home mom) I did not mind cooking. Kids are all adults and husband retired. The easier the recipe the better. I cooked the asparagus in the Lagasse 360 with OO and kosher salt. Then I wrapped the deli turkey around the asparagus. No need to wait for water to boil.Keep the recipes coming. Thank you.
