    These Walnut Chocolate Chip Cookies are delicious with no added sugar, gluten, butter, or oil. Plus, you don't need any special ingredients to make them.

    Walnut Chocolate Chip Cookies from Living Well Kitchen

    These walnut chocolate chip cookies are the best: they are so delicious and don't require too many ingredients. No flour, no butter, no added sugar - just nuts, dates, a few chocolate chips, and an egg.

    Here are a few tips I've learned through my multiple batches...

    **They aren't exactly like regular cookies made with flour, butter, and sugar. They look a little different {as seen in the pictures} and they have a different texture. They also aren't as sturdy. One bite will change any negative thoughts you might have about them, though

    **I soaked the dates and walnuts in hot water for like 10 minutes before to make them soft and well blended. This step isn't necessary if you use dates that are soft. For dried dates, I would soak them a little before blending. Be sure to drain off all the water, so your cookies aren't soggy.

    **The cookies don't flatten when baking {there is no butter}, so shape them into the cookie shape you want and make sure they are flattened on the baking sheet.

    **I recommend using foil or greasing the baking sheet because they kinda got stuck to the baking sheet without it.

    **The orange zest is optional but really kinda isn't because it really brings out that delicious chocolate chip cookie flavor. I don't recommend skipping it unless you need cookies ASAP and you have all the ingredients but orange zest. That's just my personal opinion.

    Ingredients

    • 1 cup dates about 10 pitted dates
    • 1 cup walnuts
    • 1 large egg
    • 1 teaspoon vanilla extract
    • ยฝ teaspoon orange zest
    • ยผ teaspoon salt
    • ยผ teaspoon baking soda
    • โ…“ cup chocolate chips

    Instructions

    • Preheat oven to 350°F. Line a baking sheet with foil. Set aside.
    • Add dates to a food processor and blend for 30 seconds until relatively smooth. Add nuts and process until blended. Add egg, vanilla extract, orange zest, salt, and baking soda. Process until barely chunky.
    • Stir in chocolate chips. Transfer to prepared baking sheet. Place about 1 inch apart and make sure to flatten cookie before baking {they do not spread}.
    • Bake 9-12 minutes. Let them cool on the baking sheet for 2 minutes before carefully removing from baking sheet to a cooling rack.
