Ingredients
2poundspotatoesabout 4 potatoes
2tablespoonoilavocado oil
¼teaspoonsalt
1poundground beef
2mediumonions2.5 cups, diced
10tablespoonsketchup(½ cup + 2 TBSP)
¼cupmustard
4ouncescheese1 cup, shredded
4cupslettuce
1pickleoptional, sliced
Instructions
Make the fries:
Fill a bowl with ice water. Slice the potatoes into sticks or wedges. As you are cutting, put the cut potatoes into a bowl of ice cold water. Once all the potatoes are cut, rinse them and cover them with fresh cold water. Let them sit in the water for at least 10 minutes.
Put a large baking sheet (lined with foil for easier cleanup) in the oven and preheat the oven to 450°F.
Drain potatoes and dry them very well. Dry out the bowl. Toss the {very well dried} potatoes with the oil and salt in the dry bowl.
Carefully take the baking sheet out of the oven {it will be hot!}, and put the potatoes on it in a single layer. Put in the oven and bake for 15 minutes. Take out and stir potatoes, making sure to get them back in a single layer on the baking sheet. Put back in the oven for 12-15 minutes until the potatoes are lightly browned and crispy.
Prepare the hamburger fries:
Meanwhile, add the ground beef and onions to a large skillet. Cook over medium-high heat, stirring while breaking up the ground beef, until the beef is done. Drain off any grease and set aside.
Once the potatoes are cooked, arrange them on the baking sheet so the potatoes are very close together. Top with the ground beef mixture.
Stir together the ketchup & mustard. Drizzle the mixture over the ground beef covered potatoes, reserving 2 tablespoons. Sprinkle with cheese if using.
Transfer to oven and bake for 10 minutes, until cheese has melted. Remove from oven and let sit for at least 5 minutes. Sprinkle with lettuce and pickle slices if using. Enjoy!
