Ingredients
1poundground beef
2mediumonionsabout 2.5 cups, diced
1tablespooncornstarch
1teaspoonchili powder
½teaspoongarlic powder
¼teaspoonsalt
1(15 ounce) candiced tomatoeswith juices
1(15 ounce) canhominyrinsed & drained
4ouncescheddar cheesegrated, about 1 cup
Instructions
Preheat the oven to 350°F.
In a large skillet or Dutch oven, cook the ground beef and onion over medium-high heat. Drain and return to skillet.
Sprinkle in cornstarch, chili powder, garlic powder, and salt. Stir well. Add in canned tomatoes. Let simmer for 5 minutes. Add in hominy and stir. Simmer for 10 minutes, until most of the liquid has absorbed.
Transfer to a casserole dish (like a 9-inch baking dish), if desired, and sprinkle with grated cheese.
Transfer to the oven and bake for 30 minutes. Let sit for at least 5 minutes before serving. Enjoy!
Notes
*If the cheese starts to get too browned while in the oven, cover lightly with foil or a top.*If you are making to bring to someone, simply prepare as directed and transfer to a disposable casserole dish.
