Ingredients
1.25lbsteakcut into bite sized pieces
1largeoniondiced
2mediumcarrotsdiced
3stalks celerydiced
1(6-8 ounce) potatounpeeled and chopped
4cupsunsalted beef broth
4cupswater
1(14.5 ounce) candiced tomatoesno salt added, undrained
2(16 ounce) bagsfrozen soup mix vegetables
1tablespoondried parsley
1teaspoonsalt
¾teaspoonpaprika
½teaspoongarlic powder
¼teaspoonground black pepper
Instructions
Heat a large soup pot or Dutch oven over medium-high heat. Add the steak to the pot and cook until browned on all sides. Drain off grease if needed.
Add the onions, carrots, and celery. Sauté for 5 minutes until slightly softened.
Add the remaining ingredients and stir well. Bring soup to a boil and reduce heat to medium-low. Partially cover pot. Simmer for at least 45 minutes or up to 2 hours, stirring occasionally. Season to taste if needed. Enjoy!
