Homemade, whole grain, high protein version of funfetti pancakes

oats

cup
cottage cheese
▢

eggs

teaspoon
vanilla extract

almond extract

baking powder

sprinkles
Instructions
Add all the ingredients but the sprinkles to a blender or food processor. Process until smooth. Let sit for about 10-15 minutes.
Preheat a nonstick skillet or griddle over medium heat.
Stir in sprinkles to batter. Add about ¼ cup pancake batter to skillet for each pancake.
Cook on one side until bubbles form on top {about 3-4 minutes}. Flip and cook until the other side is done {about 2-3 minutes}.
Repeat until all pancakes are cooked. Serve with maple syrup and butter if desired. Enjoy!
