Have dinner ready in under 10 minutes. This vegetarian dish is full of veggies and full of flavor from the pesto. You can use store-bought pesto or homemade.
Boil a pot of water. Once water boils, add pasta and cook 7-9 minutes {or until al dente}.
Meanwhile, put ¼ cup pesto in a large bowl.
Drain pasta and reserve ¼ cup pasta cooking water. Add the hot cooked pasta to the pesto. Toss the pasta with the pesto. Stir in the tomatoes and bell pepper.
Serve each plate with ½ oz. freshly grated Parmesan cheese.
