  • 6 slices center-cut bacon chopped
  • 2 heads broccoli (about one pound) roughly chopped
  • 1 medium onion chopped
  • 1/2 tsp dried oregano
  • 1/2 tsp no-salt added Italian spice
  • 1/4 tsp red pepper flakes
  • 4 cloves garlic minced
  • 15 ounce can chickpeas drained and rinsed {or 1 1/2 cups cooked chickpeas}
  • 1/4 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 2 oz freshly grated Parmesan cheese or about 1/2 cup

  • In a very large skillet, add bacon & cook over medium heat.
  • Meanwhile, partially steam the broccoli {about 3 minutes} or microwave it in a microwavable bowl with 2 TBSP water, loosely covered, for 4 minutes. Drain, and set aside.
  • Once bacon is cooked, transfer to paper towels. Drain all but 1 tablespoon bacon grease off of the skillet.
  • Put the skillet (with the 1 TBSP bacon grease) over medium heat, and add the onions, oregano, Italian spice, and red pepper flakes. Cook until onion has softened, about 7 minutes. Add garlic and stir constantly for about 1 minute. Add chickpeas to the pan, and cook another 2 minutes.
  • Stir in broccoli, salt, and pepper. Cook about 3 minutes, until broccoli is heated through and stirring well to combine everything.
  • Transfer to plates, and top each serving with about 2 TBSP (or 1/2 ounce) of Parmesan. Enjoy!
