Potato Chips made in the microwave? They actually work and are a great substitute for regular potato chips. Great for dipping or snacking

Ingredients
1lbred potatoesscrubbed & rinsed, do not peel
½teaspoonsalt-free seasoningoptional
¼teaspoonsalt
½tablespoonoilavocado or olive oil
spray oil or cooking spray
Instructions
Fill a large bowl with ice cold water. Using a mandolin, slice the potatoes very thin (I did mine about 1/16 inches thick). Add the sliced potatoes to the water filled bowl, and let sit for about 15 minutes. Drain and dry the potatoes really well.
{This step is optional} In a dry bowl, add the potatoes, seasoning, salt, & oil. Mix together, making sure all the potatoes are evenly coated.
Rub a large microwave safe plate lightly with a little extra oil. Make sure it is well coated.
Add the potatoes in a single layer to the plate. {You will have to make the chips in a couple of batches}.
Microwave on high for 4 minutes. Carefully flip the potatoes over. Microwave for another 2 to 4 minutes. When they are lightly browned, remove them from the plate and set aside.
Be careful to watch the potatoes! They will burn quickly, so you need to keep an eye on them. This is really important!
Store the potatoes in an air-tight container at room temperature. They will last for a couple of days, I think, but mine were all eaten before the day was over.
These go well with any dip or on their own. They are also delicious topped with cheddar & salsa. Enjoy!
Notes
*You really want to make sure your potatoes are dry. *Wipe the plate with oil but not too much. *You don't have to season or oil your potatoes. Lightly oiling the plate is enough to keep them from sticking, and these are delicious even without seasoning or salt. *These burn fast so check often {every 30 seconds or less} I do mine for 4 minutes, flip {take out any that are done} then another 2:35 minutes, flip again {take out any that are done} and microwave another 1:30, then microwave in 30 second intervals until all are done
