1tablespoonoilolive oil or avocado oil
1largeoniondiced
1green bell pepperdiced
1jalapenominced

1cupquinoa
4cupswateror broth
28ouncecan diced tomatoes
8ouncecan tomato sauce
15ouncecan kidney beansrinsed and drained
15ouncecan black beansrinsed and drained
15ouncecan pinto beansrinsed and drained
4teaspoonschili powder
1teaspooncumin
1teaspoonpaprika
½teaspoonground coriander
½teaspoongarlic powder
½teaspoonsalt
¼teaspooncayenne pepper
Instructions
Heat oil in a large soup pot over medium heat. Add onions and bell pepper. Sauté for about 5 minutes until lightly browned.
Add jalapeño, garlic, and quinoa. Stir for 30 seconds. Pour in water, diced tomatoes with juices, and tomato sauce. Stir well.
Add in remaining ingredients and stir well. Bring to a boil. Reduce heat to a simmer, and simmer for 25 minutes, stirring occasionally. Taste and adjust seasoning as needed. Enjoy!
