Ingredients
12ouncescherry tomatoessliced (about 2 cups)
½mediumred oniondiced (about ½ cup)
1mediumbell pepperdiced (about 1 cup)
1tablespoonolive oil
⅛teaspoonsalt
2lemonsjuiced (about 6 tablespoons)
12ouncesedamamecooked and cooled
6ouncescrumbled feta1 ½ cups
2mediumavocadoschopped (about 2 cups)
¼cupchopped fresh cilantro or parsley
Instructions
In a glass or plastic bowl, stir together tomatoes, onion, bell pepper, olive oil, salt and lemon juice. Cover and refrigerate for at least 30 minutes.
When ready to serve, stir in the edamame, feta, and avocado. Stir in chopped cilantro or parsley.
Keep covered in the fridge for about 3-4 days (but the edamame will turn a pale green and the avocado might turn a little brown).
