A tasty, homemade alternative to store-bought sausage using ground turkey and spices for a high protein low sodium breakfast sausage.

Instructions
Mix all of the ingredients together in a bowl.
Form sausage into patties.
Cook patties in a skillet, in the oven, or in the air fryer they reach an internal temperature of 165°F.
For the skillet:
Heat a large, dry skillet over medium-high heat.
Cook patties for about 5 minutes, flip, and and cook another 5-7 minutes until done.
For the air fryer:
Preheat the airfryer to 375°F.
Put the sausage patties in a single layer and bake for 8-10 minutes, flipping halfway through cook time.
For the oven:
Preheat the oven to 400°F. Put the sausage patties in a single layer on a baking sheet lined with parchment or foil.
Bake for 10 minutes, flip, and bake for another 5-10 minutes until done.
Notes
*2 pounds makes about 24 small sausage patties.
*Fennel seeds are optional.
*Freeze cooked patties in a freezer bag for up to 12 weeks.
