Roasted Zucchini Hearts and Goat Cheese
Heart-shaped veggies make life more fun, and these heart-shaped zucchinis are delicious after being roasted and topped with goat cheese

Preheat oven to 425*F. Line a baking sheet with foil for easier clean up if desired.
To make the zucchini hearts:
Start by making a full length slice about 1/3 of the way into the zucchini.
Make another full length slice about a quarter of an inch away from your first slice. Remove the slice.
Make a very thin slice along each edge of the zucchini to make it look more heart shaped.
Slice your zucchini horizontally into quarter inch slices to make zucchini hearts.
Add oil to a baking sheet and gently toss with the zucchini hearts. Season with salt and pepper. Feel free to use any other seasonings if desired. I used salt and garlic pepper.
Add zucchini hearts to the oven preheated to 425*F. Set the timer for 20 minutes.
Carefully stir your zucchini hearts and roast another 10-15 minutes until your zucchini hearts are golden brown. Remove from oven and transfer to a plate.
Top with crumbled goat cheese. This is delicious served warm or at room temperature. Enjoy!
