Ingredients
1poundzucchini
1tablespoonolive oil
¼teaspoonsalt
¼teaspoonpepper
2ouncescrumbled goat cheese
Instructions
Preheat oven to 425*F. Line a baking sheet with foil for easier clean up if desired.
To make the zucchini hearts:
Start by making a full length slice about ⅓ of the way into the zucchini.
Make another full length slice about a quarter of an inch away from your first slice. Remove the slice.
Make a very thin slice along each edge of the zucchini to make it look more heart shaped.
Slice your zucchini horizontally into quarter inch slices to make zucchini hearts.
To roast:
Add oil to a baking sheet and gently toss with the zucchini hearts. Season with salt and pepper. Feel free to use any other seasonings if desired. I used salt and garlic pepper.
Add zucchini hearts to the oven preheated to 425*F. Set the timer for 20 minutes.
Carefully stir your zucchini hearts and roast another 10-15 minutes until your zucchini hearts are golden brown. Remove from oven and transfer to a plate.
To serve:
Top with crumbled goat cheese. This is delicious served warm or at room temperature. Enjoy!
