Deliciously festive gluten free protein pancakes full of all the good things -- satisfying protein, fiber-filled whole grains, even spinach! These are great any time of year, not just for St. Patrick's Day

Ingredients
1 ½cupoats
4cupsfresh spinach100g
1 ½cupcottage cheese
6eggs
1 ½teaspoonbaking soda
1tablespoonchia seeds
1tablespoonvanilla extract
maple syrup & butter for serving
Instructions
Add the oats and spinach to a food processor or blender, and blend for about 20 seconds.
Add the remaining ingredients (cottage cheese, eggs, baking soda, chia seeds, and vanilla extract) to the food processor, and blend until smooth. Let sit for about 5 minutes.
Meanwhile, heat a griddle or skillet to medium meat. Add about ½ cup batter for each pancake to the preheated griddle/skillet, and cook for about 3-4 minutes until bubbles form on the top. Flip and cook another 2-3 minutes until done. Repeat with remaining batter. (Recipe makes 12 pancakes)
Serve with maple syrup and butter if desired.
Notes
*Be sure to use gluten free oats if needed. *Please use real maple syrup. Don't use that fake syrup junk; I beg of you. *I used regular cottage cheese but you can use any type. Make sure to check the ingredients and find the one with simple ingredients (not lots of additives, preservatives, etc.)
