Hummus Stuffed Peppers
Three ingredient appetizer that's creamy, spicy, and delicious!
mini bell peppers
about 24 mini peppers, sliced with ribs & seeds removed
about 1 cup, shredded
Preheat the oven to 400*F. Line a baking sheet with foil (for easier clean up).
Fill each mini pepper half with about 1 teaspoon of hummus. Sprinkle with about 1 teaspoon of shredded cheese.
Bake for 5 minutes. Turn on broiler and broil for 2-3 minutes until bubbly. Enjoy hot or room temperature.
*Makes about 48 peppers
