Guacamole made with kale is a nutritious and delicious appetizer, snack or condiment perfect for anytime, day or night!

1/4cupplain greek yogurt
2tablespoonlime juiceor lemon juice
1/2cupdiced red onionsee note
1cupfinely chopped kaleabout 2 oz
Mash the avocados into a plastic or glass bowl. Stir in greek yogurt, lime or lemon juice, garlic, jalapeño, and salt.
Stir in red onion, then add in kale and stir until combined. Serve or cover and refrigerate. Keeps a few days tightly covered, but it might turn a slight brown color.
*To decrease the sharpness of the red onion, soak the diced red onion in hot water for about 5-10 minutes before stirring into the kale-amole. Be sure to pat dry before stirring into the kale-amole.*This recipe is based off something sold at Whole Foods.*This makes 1.5 cups*For a dairy free version, use 2 tablespoons olive oil and an extra 2 tablespoons lime juice in place of the yogurt.
