chickpeas
rinsed and drained

raisins
divided

nut butter

warm water

vanilla extract

old fashioned oats
or quick cooking, divided

Instructions
Add the chickpeas, ½ cup raisins, nut butter, warm water, vanilla extract, and almond extract, if using, to a food processor.
Blend until completely smooth.
Add ½ cup oats, cinnamon, and salt, and process until combined. Taste and add one teaspoon of maple syrup if desired.
Transfer to a bowl and stir in the remaining ¼ cup each raisins and oats.
Best if refrigerated for at least 1 hour before serving. Keeps up to 5 days refrigerated.

*Makes 2 cups
*Almond butter, sunflower seed butter, or peanut butter are all great options.
