Add the dates and cashews to a bowl and cover with very hot water. Let sit for 15 minutes.
Drain water and add to the bowl of a food processor. Blend until very smooth {once you add the other ingredients, it will not get any smoother}.
Add the chickpeas, vanilla extract, water, almond extract, salt, baking powder, and oats. Blend until completely smooth {adding an additional teaspoon or two of water if needed to help blend}.
Transfer to a bowl and serve immediately or refrigerate for up to 5 days. Top with sprinkles before serving if desired.
Serve with fruit slices or just eat with a spoon ;)
