1tablespoongrated onion {plus the juices that come with it}
4ouncediced pimentosdrained
⅛teaspooncayenne pepper
1packagecelerywashed and cut into sticks (about 32 "boats")
Instructions
Grate the cheese into a medium bowl. Set aside.
Put the cottage cheese in a blender or mini food processor. Blend until smooth. Add to the cheese.
Stir in the grated onion & juices and pimentos. Stir well to combine. Season with cayenne pepper. Cover and refrigerate for at least 2 hours for flavors to combine.
Slice the celery into about 4 inch sticks. Spread about 1-2 tablespoons of pimento cheese on each celery sticks. Enjoy!
