Ingredients
6slicescenter-cut bacon
1largeVidalia oniondiced
16ozmushroomssliced
4clovesgarlicminced
¾teaspoonsalt
¼teaspoonred pepper flakes
1 ½teaspoonfresh thyme
8ouncecream cheesefull-fat or reduced-fat
2cupsplain Greek yogurt16 oz
3tablespoonchopped chives or 1 green onion, chopped
Instructions
Put bacon in a large skillet and heat over medium. Cook until bacon is crispy & done. Transfer to paper towels to drain. Wipe skillet of all but 1-2 teaspoons of bacon grease.
Add onions to the bacon grease and sauté for about 5 minutes until softened. Add mushrooms and sauté until they release their juices, about 7 minutes. Add garlic, salt, red pepper flakes, and thyme and stir for 30 seconds. Add half of the bacon. Remove from heat, and set aside to cool.
Meanwhile, stir together cream cheese, yogurt, and chives. Stir in mushroom mixture. Sprinkle with remaining bacon. Really good with these microwave potato chips
