Ingredients
4cupscooked chicken breastshredded
3green onionschopped
¾cupcottage cheesepreferably low sodium
2tablespoonlemon juice
½teaspoonsalt
¼teaspoonblack pepper
¼teaspoongarlic powder
1mediumavocado
½cupcilantro
Instructions
In a plastic or glass bowl, add chicken and green onions. Set aside.
Add the cottage cheese, Greek yogurt, lemon juice, salt, pepper, and garlic to the bowl of a food processor or blender. Process until completely smooth. Add avocado and cilantro, and blend.
Stir avocado mixture into chicken. Taste and season as needed.
Keep refrigerated, tightly covered, when not in use.
Notes
*16 ounces cooked chicken is about 4 to 4.5 cups shredded chicken.*Use parsley in place of cilantro if desired.*Makes about 3.5 to 4 cups of avocado chicken salad.
