Sweet Potato and Bacon Hash
Sweet Potato and Bacon Hash is a satisfying breakfast or brunch recipe full of onions, sweet potatoes and bacon flavor topped with a fried egg
or 1/4 tsp crumbled dried thyme
In a large skillet, cook the bacon over medium heat. Remove and put on paper towels. Keep bacon droppings in pan (it's around 1 tablespoon)
Turn heat up to medium high and add sweet potatoes. Let them sit in the pan and cook on one side for 4 minutes then stir and cook another 3 minutes until they are golden and slightly softened.
Add onions to the pan and sauté for about 10 minutes, stirring occasionally.
Meanwhile, fry eggs in a non-stick skillet, one at a time.
Add in garlic, thyme, and salt to the sweet potato mixture. Cook for 2 minutes until very fragrant.
Serve fried eggs over hash, and sprinkle with reserved bacon. Enjoy!
*If you don't want to use bacon, omit and sauté the veggies in 1 tablespoon butter or olive oil.
*The hash will still be great without the thyme but the thyme adds a lot of flavor.
