Ingredients
1cupmilk2%, whole, or unflavored non-dairy milk
1largeegg
½teaspoonhot sauceoptional
4fish fillets4-6 oz each
5ouncespotato chipsany flavor
1teaspoonolive or coconut oil
Instructions
Whisk together milk, egg, and hot sauce and add to a zip-top bag or shallow dish. Soak fish in mixture for about 30 minutes.
Crush potato chips into crumbs {easiest in a food processor}. Put in a shallow dish.
Heat oil over medium-high heat in a large skillet.
Take fish out of milk and let drip dry. Put fish in bowl with chips and press lightly to coat the entire fish in chips. Put coated fish in the hot oil. Repeat with remaining fillets.
Flip fish after about 5-7 minutes or when it easily releases from the skillet.
