Ingredients
For the filling:
¼cupsunflower seed butter
2tablespoon+ 2 teaspoon non-fat dry milk powder
1tablespoon+ 1 teaspoon plain Greek yogurt
5-½teaspoonpowdered sugar
pinch of salt
¼teaspoonvanilla extract
For the coating:
3tablespoonchocolate chips
½teaspooncoconut oil
Instructions
To make the filling:
Stir together all the filling ingredients until the mixture is smooth and is the consistency of Play-Doh.
Shape into six tablespoon sized balls {or 3 large ones}. Shape them into egg shapes and put on a wax paper or parchment lined plate. Put in the freezer.
To make the coating:
Put the chocolate chips and coconut oil in a microwave safe bowl. Microwave on High for 25 seconds. Stir, and repeat until the chocolate chips are melted. Make sure not to burn the chocolate.
To make the eggs:
Take the filling out of the freezer. Put one in the bowl with the chocolate. Let the excess come off or use a spoon to get it off. Put on the wax paper or parchment lined plate. Spoon a little chocolate over the top and use the spoon to help coat the entire egg. Repeat with remaining eggs.
Put back in the freezer for at least 20 minutes before serving. Enjoy!
Keep tightly covered in the freezer or refrigerator {they're better in the freezer in my opinion}
