Ingredients
1tablespoonoildivided, avocado or olive oil
1mediumhead cauliflowercut into florets
1mediumoniondiced
8ozlean ground beef
2clovesgarlicminced
¼teaspoonsalt
¼teaspoonground black pepper
2cupsmarinara sauceor pizza sauce
¼cupwhole grain bread crumbs
½cupParmesan cheesefreshly grated, 2 oz.
Instructions
Preheat oven to 400°F.
Toss cauliflower florets and 2 teaspoon oil together in a 9x13 glass baking dish. Roast in preheated oven for 15-20 minutes, stirring once halfway through cooking.
Meanwhile, heat remaining 1 teaspoon oil over medium-high heat and cook onion & ground beef until beef is browned and onion has softened. Stir in garlic and cook for 30 seconds.
Stir in salt, pepper, and marinara sauce. Remove from heat.
Pour meat sauce over roasted cauliflower. Sprinkle evenly with bread crumbs and Parmesan cheese. Bake for 7-10 minutes, until cheese is bubbly. Enjoy!
