1teaspoonolive oil
1mediumonionchopped
1clovegarlicminced
⅛teaspoonsaltdivided
2largeeggs
2tablespoonswater
few dashes of hot sauceoptional
¼cupshredded Parmesan cheese or Swiss or Gruyere
Instructions
Heat the oil over medium heat in a skillet. Add onion, and caramelize. It should take about 20-30 minutes but there's very little hands-on activity; just stir occasionally.
Add in the garlic and salt and stir for 30 seconds. Remove from heat and set aside to cool slightly.
Meanwhile, whisk together the egg, water, and hot sauce, if using.
Heat an 8-inch non-stick skillet over medium. Pour in eggs, and let set for 3 minutes.
Gently push down the sides slightly, and tilt the pan to re-distribute the uncooked eggs.
Sprinkle the eggs with onions & cheese. Let the eggs harden to your desired consistency.
Remove from heat, and fold one half over onto the other to make an omelet. Slide onto a plate & enjoy!
