In a medium sized bowl, stir together applesauce and sunflower butter. Make sure to stir completely together.
Stir in oats, flax meal, water, cinnamon, vanilla, salt, and sugar. Stir well to completely combine. Let sit for at least 10 minutes.
Line a baking sheet with a reusable baking liner or parchment paper. Preheat oven to 350°F
Drop cookie dough by tablespoonfuls onto prepared baking sheet. Decorate with sprinkles if desired.
Bake for 9-12 minutes until cookies are set and lightly browned. Let sit on cookie sheet for 3 minutes then transfer to cooling rack to cool completely.
Keep in an airtight container in the refrigerator for up to 4 days.

*These cookies are pretty cakey, so don't expect your typical cookie. They're still delicious though
