Ingredients
½teaspoonoil
10ozelbow macaroni {about 2 ½ cups}
3tablespoonbutterdivided
1largeoniondiced
1clovegarlicminced
2tablespoonflour
2cupsmilk
½teaspoonsalt
⅛teaspooncayenne pepper
⅛teaspoonnutmeg
1bay leafoptional but adds great flavor
4ozgrated Gruyere cheeseabout 1 ⅓ cups
6ozcheddar cheeseabout 1 ½ cups
¾lbcooked lobsterchopped {I used two whole cooked lobsters and used the tail & claw meat}
⅔cupwhole grain bread crumbs
Instructions
Preheat oven to 375°F. Rub a medium sized baking dish {about 11 x 7} with oil. Set aside.
Cook the pasta according to package directions, omitting salt & fat, about 6-8 minutes. Drain, set aside.
In a Dutch oven or large pot, heat 2 tablespoon butter over medium heat.
Once melted, add in the onions and sauté until softened, about 7 minutes.
Turn heat down to low. Whisk in flour, and stir constantly for 1-2 minutes. Then slowly, whisk in milk. Season with the salt, cayenne pepper, nutmeg, and add in the bay leaf.
Cook another 2-3 minutes, continuing to stir, until the sauce has thickened and is smooth.
Remove from heat, and stir in cheeses. Remove bay leaf. Stir in chopped cooked lobster and cooked macaroni, and stir until everything is well combined.
Transfer the macaroni mixture to the prepared baking dish.
Melt the remaining tablespoon of butter and mix with bread crumbs.
Top macaroni with buttered bread crumbs.
Bake in preheated oven for about 30 to 35 minutes, until bubbly and lightly browned. Let sit for 5 minutes before serving. Enjoy!
