In a medium bowl, mash egg yolks. Stir in vinegar, sun dried tomatoes, salt, and olive oil.
Stir in tuna and basil.
Fill each of the egg white halves with the tuna mixture. Serve with extra chopped basil if desired.
Notes
*If you want to reduce the protein or just don't like eggs, omit the eggs and serve over lettuce or whole wheat bread. *Do not drain oil from tomatoes; for sun-dried tomatoes not packed in oil, add an extra 1-2 teaspoon olive oil.
