Ingredients
1avocadocubed
1red oniondiced
1limejuiced
¼cupcilantrochopped
1tablespoonoilavocado or olive oil
1poundraw shrimpshells & tails removed and chopped
¼teaspoonsalt
⅛teaspoonblack pepper
8tortillaswheat or corn tortillas
Instructions
Add the avocado, diced red onion, lime juice, pinch of salt, and cilantro to a plastic or glass bowl. Gently stir together. Set aside.
Heat the oil over medium-high heat in a large skillet. Add the chopped shrimp and cook about 5 to 7 minutes, until shrimp are done. Remove from heat.
Meanwhile, warm the tortillas in the microwave {wrap the tortillas in a damp paper towel and microwave together for about 30 seconds} or individually in a dry skillet.
Gently stir the cooked shrimp into the avocado mixture. Season with salt & pepper if desired.
Serve the shrimp mixture in the warmed tortillas; feel free to add whatever extra toppings you'd like.
