Notes
*8 ounces of cottage cheese is 1 cup.*4 ounces of cheddar equals about 1 cup shredded.*3 ounces of parmesan equals about ¾ cup shredded.*4 ounces of pickled jalapenos equals about ¼ cup sliced.*Since jalapenos can vary in spiciness, I recommend tasting the dip before covering it in breadcrumbs and baking. If needed, you can add more jalapenos for a spicier flavor. Or add more cheese to dampen the spiciness.*For a gluten-free dip, omit the bread crumbs or use gluten-free bread crumbs.*Use a 1 to 1½ quart baking dish.*Makes about 4 cups.
