15ozcan black beansdrained & rinsed
3TBSPlime juicefrom 1 lime
Bring water to a boil and add rice. Reduce heat to simmer and cook for 30-45 minutes until rice is tender but not mushy
Drain immediately and toss with oil, salt and garlic
Let cool for about 15 minutes. Then stir in black beans, cilantro and lime juice. Enjoy!
*Recipe makes 7 cups*Can use avocado oil in place of olive oil if desired*If you want to use pre-cooked rice, you'll need 4 cups cooked rice. Skip the first step where you boil the water and cook the rice.
