15ouncecan no-salt added peasrinsed and well drained
⅓cupplain yogurt
1limejuiced
1jalapeñoseeded & finely minced
3clovesgarlicfinely minced
¼teaspoonkosher salt
⅛teaspoonfreshly ground black pepper
½cupchopped tomatoes {about 1 plum tomato or 12 grape tomatoes}
½smallred onionfinely diced
Instructions
In a glass or plastic bowl, mash together avocado and peas, until it reaches your desired consistency {some like it mushy others like it chunky. It's up to you}
Stir in yogurt and lime juice until smooth.
Stir in jalapeños and garlic. Add in the salt and pepper. Taste and add additional seasoning if needed. Stir in tomatoes and onion.
Let sit for at least 30 minutes. If you are serving it later, keep refrigerated, tightly covered until ready to serve. It will keep in the refrigerator for up to 3 days {it's not as pretty but it still tastes good}Serve with pita chips, bell pepper strips, celery, carrots, or with tacos.
