Ingredients
3largetomatoescored & diced {be sure to save the juices from tomatoes while chopping}
2mediumred bell peppersor yellow, diced
1Tjalapenominced
1english cucumbersseeded and diced
½cupVidalia onion diced, about half of an onion
2clovegarlic minced
¾teaspoonsalt
4cupslow-sodium tomato juice
¼cupred vinegaror white wine vinegar
¼cupchopped cilantro or parsley
1Tlime juiceor lemon juice
½teaspoonhot sauce
2teaspoonolive oil
1avocadosliced
Instructions
In a plastic or glass bowl, stir together tomatoes, bell peppers, jalapeño, cucumber, onion, and garlic. Sprinkle salt on top and let sit about 10-15 minutes.
Add tomato juice, vinegar, parsley, lime juice, and hot sauce. Gently stir.
Refrigerate at least 30 minutes or until ready to serve.
Top each serving with ½ teaspoon olive oil. Serve with avocado slices on top.
